Instructions
  1. Beat together butter and sugar.
  2. Blend in the flour, baking powder and salt. Mix until crumbly, take care not to over mix!
  3. Line 8" x 8" baking pan with baking paper. Press mixture into pan and bake for about ten mins, until the edges begin to slightly brown. Meanwhile, move onto the next step.
  4. Mix melted butter, brown sugar, birch syrup and egg together in a bowl.
  5. When the base is ready, pour the topping mixture over the base and return to the oven for 25-30 mins. Remove from heat when top bubbles and place on a cooling rack, still in the baking pan.
  6. Allow to cool completely before cutting or they will fall apart. Serve on their own as a snack or with ice cream or cream as a delicious desert.
